The art of preparing classic Southern foods, especially Carolina Barbeque, had always been a part of Caroline's upbringing and was an essentail part of gracious entertaing in her hometown of Lake City, South Carolina.  So when a space two doors down from her bakery unexpectedly opened, Caroline jumped at the chance to serve her favorite Southern sandwiches, soups, salads and of course, Carolina barbeque, to eager customers and friends.

Caroline's Gourmet Take It Away first opened its doors in August 2004.  The underlying concept was to offer customers the finest Southern foods without the fuss.  Annapolis residents, commuters and beach-goers could not seem to get enough.  Word of Take It Away's deliciously simple Southern food quickly spread and menu items like Carolina Barbeque, Lowcountry Dip and Caroline's Cream of Crab Soup began flying out the door.

Within a year the menu was tightened, recipes were perfected and her famous dessert minis, like Lemon Squares and Caramel Brownies, were added.  Caroline soon used her whimsical and imaginative retail eye to add a gift shop offering some of the most unique gifts available in the Annapolis area.  Once the foundation was laid, Caroline's son, Richard Reutter, began diligently managing the deli in August 2005.  He soon expanded the deli to include a much anticipated catering department featuring select menu items and Southern specialties like Cheese Biscuits and Shrimp & Grits.
